Roasted Tricolor Carrots with EVOO + Everything but the Bagel Seasoning

Ingredients:

  • 1 lb tricolor carrots (orange, purple, yellow), peeled and sliced lengthwise
  • 2 Tbsp extra-virgin olive oil
  • 1–2 tsp Everything but the Bagel seasoning
  • Optional: fresh parsley for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Place carrots on a baking sheet. Drizzle with olive oil and toss to coat evenly.
  3. Sprinkle with Everything but the Bagel seasoning. Toss again.
  4. Spread carrots out in a single layer. Roast 20–25 minutes, flipping halfway, until tender and slightly caramelized.
  5. Garnish with fresh parsley and serve warm.
