Red Velvet Energy Bites
Ingredients:
- 1 ¼ C rolled oats
- 1 C medjool dates, pitted
- ½ C nut or seed butter
- ¼ C tart cherry juice
- 1 tsp vanilla extract
- 1 scoop Momentous protein powder (vanilla or unflavored)
- ⅓ C ground flax seeds
- ½ C coconut flakes, optional
- ½ – 1 C white chocolate chips
Directions:
- Place the oats and dates in a food processor and pulse until combined. Place in a large bowl.
- Add the nut or seed butter, tart cherry juice, vanilla extract, protein powder, flax seeds, and coconut flakes. Combine well. Add the white chocolate chips.
- Roll the dough into bite-sized balls. Press in extra chocolate chips.
- Store in an airtight container at room temperature up to 5 days or in the fridge for up to 14 days. Freeze up to 2 months.
Notes:
- You may prefer to use a food processor to combine all ingredients rather than your hands.
- Adjust the tart cherry juice amount depending on consistency. Add maple syrup or more nut/seed butter for extra stickiness if needed.
