Red Velvet Energy Bites

Ingredients:

  • 1 ¼ C rolled oats 
  • 1 C medjool dates, pitted
  • ½ C nut or seed butter 
  • ¼ C tart cherry juice 
  • 1 tsp vanilla extract 
  • 1 scoop Momentous protein powder (vanilla or unflavored)
  • ⅓ C ground flax seeds 
  • ½ C coconut flakes, optional 
  • ½ – 1 C white chocolate chips 

Directions:

  1. Place the oats and dates in a food processor and pulse until combined. Place in a large bowl.
  2. Add the nut or seed butter, tart cherry juice, vanilla extract, protein powder, flax seeds, and coconut flakes. Combine well. Add the white chocolate chips. 
  3. Roll the dough into bite-sized balls. Press in extra chocolate chips. 
  4. Store in an airtight container at room temperature up to 5 days or in the fridge for up to 14 days. Freeze up to 2 months.

Notes:

  • You may prefer to use a food processor to combine all ingredients rather than your hands. 
  • Adjust the tart cherry juice amount depending on consistency. Add maple syrup or more nut/seed butter for extra stickiness if needed.
