Chewy High-Protein Chocolate Chip Bars

Ingredients

  • 1/3 cup maple syrup (~173 kcal)

  • 2 tbsp honey (~128 kcal)

  • ½ cup PB2 powder (~50 kcal)

  • 1.5 cups Momentous Vanilla Protein Powder (~360 kcal)

  • ¾ cup pecans, chopped (~300 kcal)

  • ¾ cup almonds, chopped (~400 kcal)

  • 3 tbsp pumpkin seeds (~90 kcal)

  • ½ cup unsweetened shredded coconut (~200 kcal)

  • ¼ cup dark chocolate chips (~200 kcal)

  • 2 tbsp unsweetened applesauce (moisture for chewiness)

  • 1–2 tsp coconut oil, melted (softens texture)

  • 1 tsp cinnamon

  • ½ tsp vanilla extract

  • Pinch sea salt

Instructions

  1. Toast the nuts & seeds (optional)

    • In a dry skillet over medium heat, toast pecans, almonds, pumpkin seeds, and shredded coconut for 3–5 minutes until fragrant. Cool slightly.

  2. Prepare the syrup binder

    • In a small saucepan over low heat, combine maple syrup, honey, PB2 powder, applesauce, and coconut oil. Stir until smooth and slightly thickened.

    • Remove from heat and stir in vanilla extract and cinnamon.

  3. Combine dry ingredients

    • In a large bowl, mix Momentous Protein powder (Use code WendiIrlbeck for 15% OFF toasted nuts, seeds, coconut, and half of the chocolate chips. Add a pinch of sea salt.

  4. Mix wet + dry

    • Pour the syrup mixture over the dry ingredients. Stir thoroughly until the mixture sticks together. It should hold when pressed.

    • Fold in the remaining chocolate chips gently (this ensures some chocolate is on top for soft bites).

  5. Press into pan

    • Line an 8×8-inch pan with parchment paper.

    • Press mixture firmly but not overly tight into the pan. Aim for an even thickness of ~1 inch for softer, chewy bars.

  6. Chill & set

    • Refrigerate for 1–2 hours. After chilling, let sit 10–15 minutes at room temperature before cutting to maintain softness.

  7. Cut & store

    • Lift out with parchment paper and cut into 12 bars.

    • Store in an airtight container in the fridge for up to 1 week.
