NWW’s High Protein Chocolate Chip Cookie
Ingredients:
- 1 cup full fat Greek yogurt (Oikos Pro is my favorite)
- 1 tsp pure vanilla extract
- 1/4 cup pure maple syrup
- 1 cup flour of your choice
- 1/2 cup vanilla whey protein (@Momentous vanilla or chocolate whey)
- 2 tbsp melted coconut oil
- 4 tbsp. PB2 powder
- 1/2 cup chocolate chips
Directions:
- Preheat your oven to 350 degrees and spray a baking sheet with non-stick cooking spray or line with parchment paper.
- Using a food processor or blender, combine the Greek yogurt, maple syrup & vanilla. Blend until smooth and fully combined.
- In a large mixing bowl, add flour and protein powder and whisk together. Add in the melted coconut oil, and then add the Greek yogurt mixture.
- Use a standing or hand mixer to mix until fully combined. You can expect the dough texture to be very sticky and crumbly.
- Fold in chocolate chips of your choice.
- Use a spoon to scoop dough into balls. Place onto a baking sheet. Flatten each dough ball with a spatula or hand.
- Bake for about 15 minutes and let cool for 5- 10 minutes before enjoying. Top with flaky sea salt if you’re feeling extra!
